Ingredients

  • Pasta (spaghetti or penne) - 150g
  • Broccoli florets - 200g
  • Olive oil - 2 tablespoons
  • Garlic, minced - 3 cloves
  • Nutritional yeast - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Almond milk (unsweetened) - 1/2 cup
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes (optional) - 1/4 teaspoon

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, steam the broccoli florets for about 5 minutes until tender but still bright green.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  4. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the garlic.
  5. Add steamed broccoli, nutritional yeast, lemon juice, almond milk, salt, and black pepper to the skillet. Mix well, adding reserved pasta water as needed to reach desired creaminess.
  6. Toss everything together until evenly coated and heated through, about 2-3 minutes. Adjust seasoning with more salt, pepper, or red pepper flakes if desired.
  7. Serve immediately, garnished with additional nutritional yeast or red pepper flakes if desired.
