Ingredients

  • Broccoli florets - 300 grams
  • Cashews (raw) - 100 grams
  • Nutritional yeast - 3 tablespoons
  • Almond milk - 200 ml
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Bread crumbs (vegan) - 2 tablespoons

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a small bowl, soak the cashews in warm water for at least 20 minutes, then drain.
  3. In a blender, combine the soaked cashews, almond milk, nutritional yeast, garlic powder, onion powder, turmeric, salt, and black pepper. Blend until smooth and creamy.
  4. In a large pot of boiling salted water, blanch the broccoli florets for 2-3 minutes until bright green and slightly tender. Drain and set aside.
  5. In a large mixing bowl, combine the blanched broccoli with the cashew cheese sauce. Stir until the broccoli is well coated.
  6. Grease a small baking dish with olive oil and pour the broccoli mixture into it. Spread evenly.
  7. Sprinkle the bread crumbs over the top of the broccoli mixture.
  8. Bake in the preheated oven for 20-25 minutes, or until the top is golden and crispy.
