- Broccoli florets - 300 grams
- Cashews (raw) - 100 grams
- Nutritional yeast - 3 tablespoons
- Almond milk - 200 ml
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Bread crumbs (vegan) - 2 tablespoons
Steps
- Preheat your oven to 180°C (350°F).
- In a small bowl, soak the cashews in warm water for at least 20 minutes, then drain.
- In a blender, combine the soaked cashews, almond milk, nutritional yeast, garlic powder, onion powder, turmeric, salt, and black pepper. Blend until smooth and creamy.
- In a large pot of boiling salted water, blanch the broccoli florets for 2-3 minutes until bright green and slightly tender. Drain and set aside.
- In a large mixing bowl, combine the blanched broccoli with the cashew cheese sauce. Stir until the broccoli is well coated.
- Grease a small baking dish with olive oil and pour the broccoli mixture into it. Spread evenly.
- Sprinkle the bread crumbs over the top of the broccoli mixture.
