Ingredients
- Quinoa - 1 cup
- Water - 2 cups
- Olive oil - 1 tablespoon
- Red bell pepper - 1 medium, diced
- Spinach - 1 cup, chopped
- Green onion - 2, sliced
- Garlic - 2 cloves, minced
- Turmeric powder - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Avocado - 1 medium, sliced
- Lemon juice - 1 tablespoon
- Chili flakes - to taste (optional)
Steps
- Rinse the quinoa under cold water in a fine mesh strainer until the water runs clear.
- In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the water is absorbed. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
- While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and diced red bell pepper, sautéing for 3-4 minutes until softened.
- Stir in the chopped spinach, turmeric, cumin, salt, and black pepper. Cook for an additional 2-3 minutes until the spinach is wilted.
- Combine the sautéed vegetables with the cooked quinoa in the skillet, mixing well to incorporate.
- Drizzle with lemon juice and adjust seasoning if necessary. Serve warm, topped with sliced avocado and a sprinkle of chili flakes if desired.
