This Vegan BLT is a delicious twist on the classic sandwich, featuring crispy coconut bacon, fresh lettuce, and ripe tomatoes layered between two slices of toasted bread. It's a satisfying and flavorful meal that’s perfect for lunch or a light dinner.

Ingredients

  • Whole grain bread - 4 slices
  • Coconut flakes - 1 cup
  • Soy sauce - 2 tablespoons
  • Liquid smoke - 1 teaspoon
  • Maple syrup - 1 tablespoon
  • Tomato - 1 medium, sliced
  • Lettuce - 1 cup, shredded
  • Avocado - 1 medium, sliced
  • Vegan mayonnaise - 2 tablespoons
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine coconut flakes, soy sauce, liquid smoke, and maple syrup. Mix well until all flakes are coated.
  3. Spread the coated coconut flakes on a baking sheet in a single layer and bake for 10-12 minutes, or until crispy, stirring halfway through.
  4. While the coconut bacon is baking, prepare the other ingredients. Slice the tomato and avocado and shred the lettuce.
  5. Toast the bread slices until golden brown.
  6. Spread vegan mayonnaise on one side of each toasted bread slice.
  7. On two slices of bread, layer the shredded lettuce, sliced tomato, crispy coconut bacon, and avocado. Season with black pepper to taste.
  8. Top with the remaining slices of bread, mayo side down, and cut the sandwiches in half to serve.
