This Vegan BLT is a delicious twist on the classic sandwich, featuring crispy coconut bacon, fresh lettuce, and ripe tomatoes layered between two slices of toasted bread. It's a satisfying and flavorful meal that’s perfect for lunch or a light dinner.

Ingredients
- Whole grain bread - 4 slices
- Coconut flakes - 1 cup
- Soy sauce - 2 tablespoons
- Liquid smoke - 1 teaspoon
- Maple syrup - 1 tablespoon
- Tomato - 1 medium, sliced
- Lettuce - 1 cup, shredded
- Avocado - 1 medium, sliced
- Vegan mayonnaise - 2 tablespoons
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine coconut flakes, soy sauce, liquid smoke, and maple syrup. Mix well until all flakes are coated.
- Spread the coated coconut flakes on a baking sheet in a single layer and bake for 10-12 minutes, or until crispy, stirring halfway through.
- While the coconut bacon is baking, prepare the other ingredients. Slice the tomato and avocado and shred the lettuce.
- Toast the bread slices until golden brown.
- Spread vegan mayonnaise on one side of each toasted bread slice.
- On two slices of bread, layer the shredded lettuce, sliced tomato, crispy coconut bacon, and avocado. Season with black pepper to taste.
- Top with the remaining slices of bread, mayo side down, and cut the sandwiches in half to serve.
