Vegan Beet Burger

- Beetroot (cooked and grated) - 200 grams
- Black beans (canned, drained and rinsed) - 1 cup
- Quinoa (cooked) - 1/2 cup
- Oats (rolled) - 1/2 cup
- Onion (finely chopped) - 1 small
- Garlic (minced) - 2 cloves
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for cooking)
- Whole grain burger buns - 2
- Lettuce leaves - 2
- Tomato (sliced) - 1
- Avocado (sliced) - 1/2
Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 5 minutes.
- In a large bowl, combine the cooked beetroot, black beans, cooked quinoa, oats, sautéed onion and garlic, cumin, paprika, salt, and black pepper. Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
- Form the mixture into 2 equal-sized patties. If the mixture is too wet, add a little more oats until you achieve a firm consistency.
- Heat the remaining tablespoon of olive oil in the skillet over medium heat. Cook the patties for about 5-6 minutes on each side, until crispy and golden brown.
- Toast the whole grain burger buns in the skillet for a minute until slightly crispy.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the beet patty, sliced tomato, and avocado. Top with the other half of the bun and serve immediately.
