Ingredients
- Green jackfruit - 400g (canned in water)
- Olive oil - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Smoked paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Barbecue sauce - 1 cup
- Cornstarch - 1 tablespoon
- Water - 2 tablespoons
- Fresh parsley - for garnish
Steps
- Drain and rinse the jackfruit under cold water, then cut off the core and shred the fruit with your fingers to create a pulled texture.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, smoked paprika, cumin, black pepper, and salt to the skillet, cooking for an additional 1-2 minutes until fragrant.
- Add the shredded jackfruit to the skillet and stir to combine. Cook for about 5 minutes, letting the jackfruit absorb the flavors.
- In a small bowl, mix the cornstarch with water to create a slurry, then add it to the jackfruit mixture. Stir well and cook for another 2-3 minutes until the mixture thickens slightly.
- Pour in the barbecue sauce and stir to coat the jackfruit evenly. Reduce the heat to low and let it simmer for 10-15 minutes, allowing the flavors to meld together.
- Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
- Transfer the BBQ jackfruit mixture to the prepared baking sheet and spread it out in an even layer.
- Bake in the preheated oven for 20-25 minutes until the edges are slightly crispy, stirring halfway through.
- Remove from the oven and let cool slightly. Serve hot, garnished with fresh parsley.
