  1. Drain and rinse the jackfruit under cold water, then cut off the core and shred the fruit with your fingers to create a pulled texture.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic, smoked paprika, cumin, black pepper, and salt to the skillet, cooking for an additional 1-2 minutes until fragrant.
  4. Add the shredded jackfruit to the skillet and stir to combine. Cook for about 5 minutes, letting the jackfruit absorb the flavors.
  5. In a small bowl, mix the cornstarch with water to create a slurry, then add it to the jackfruit mixture. Stir well and cook for another 2-3 minutes until the mixture thickens slightly.
  6. Pour in the barbecue sauce and stir to coat the jackfruit evenly. Reduce the heat to low and let it simmer for 10-15 minutes, allowing the flavors to meld together.
