Ingredients
- Tortilla chips - 150g
- Canned young green jackfruit in brine - 400g
- Olive oil - 1 tablespoon
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Smoked paprika - 1 teaspoon
- Ground cumin - 1 teaspoon
- BBQ sauce - 100ml
- Vegan cheese shreds - 100g
- Avocado - 1 medium, diced
- Fresh cilantro - 2 tablespoons, chopped
- Pickled jalapeños - 2 tablespoons (optional)
Steps
- Preheat your oven to 180°C (350°F).
- Drain and rinse the jackfruit under cold water. Remove the core and seeds, then shred the jackfruit pieces with your hands or a fork until they resemble pulled pork.
- In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Add the shredded jackfruit, smoked paprika, ground cumin, and BBQ sauce to the skillet. Cook for about 10 minutes, stirring occasionally, until the jackfruit is well coated and heated through.
- On a baking sheet, spread half of the tortilla chips in an even layer. Top with half of the jackfruit mixture and sprinkle with half of the vegan cheese shreds.
- Repeat the layers with the remaining tortilla chips, jackfruit, and vegan cheese.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a minute. Top with diced avocado, chopped cilantro, and pickled jalapeños if using.
