Ingredients

  • Tortilla chips - 150g
  • Canned young green jackfruit in brine - 400g
  • Olive oil - 1 tablespoon
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Smoked paprika - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • BBQ sauce - 100ml
  • Vegan cheese shreds - 100g
  • Avocado - 1 medium, diced
  • Fresh cilantro - 2 tablespoons, chopped
  • Pickled jalapeños - 2 tablespoons (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Drain and rinse the jackfruit under cold water. Remove the core and seeds, then shred the jackfruit pieces with your hands or a fork until they resemble pulled pork.
  3. In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  4. Add the shredded jackfruit, smoked paprika, ground cumin, and BBQ sauce to the skillet. Cook for about 10 minutes, stirring occasionally, until the jackfruit is well coated and heated through.
  5. On a baking sheet, spread half of the tortilla chips in an even layer. Top with half of the jackfruit mixture and sprinkle with half of the vegan cheese shreds.
  6. Repeat the layers with the remaining tortilla chips, jackfruit, and vegan cheese.
  7. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a minute. Top with diced avocado, chopped cilantro, and pickled jalapeños if using.
