- Cooked lentils - 1 cup
- Rolled oats - 1/2 cup
- Chopped onion - 1/4 cup
- Minced garlic - 2 cloves
- Ground flaxseed - 1 tablespoon
- Water - 3 tablespoons
- Soy sauce - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Ground black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Chopped fresh parsley - 1/4 cup
- BBQ sauce - 1/2 cup
Steps
- Preheat your oven to 200°C (400°F).
- In a small bowl, mix the ground flaxseed with 3 tablespoons of water and let it sit for about 5 minutes to thicken.
- In a large mixing bowl, combine the cooked lentils, rolled oats, chopped onion, minced garlic, soy sauce, smoked paprika, black pepper, salt, and chopped parsley.
- Add the thickened flaxseed mixture to the bowl and mix everything until well combined.
- Using your hands, form the mixture into small meatballs, about 2.5 cm (1 inch) in diameter.
- Place the meatballs on a baking sheet lined with parchment paper and bake in the preheated oven for 20 minutes, flipping halfway through.
- While the meatballs are baking, heat the BBQ sauce in a small saucepan over low heat.
- Once the meatballs are done baking, remove them from the oven and toss them in the warm BBQ sauce until evenly coated.
- Serve hot with extra BBQ sauce on the side and enjoy!
