  • Black pepper - ½ teaspoon
  • Vegan butter - 2 tablespoons
  • Onion - 1 medium, sliced
  • Vegetable broth - 250 ml
  • Thyme - 1 teaspoon, dried

Steps

  1. Peel and chop the potatoes into even chunks. Place them in a pot, cover with water, and bring to a boil. Cook for about 15-20 minutes, or until soft.
  2. While the potatoes are cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onion and sauté until golden brown, about 5-7 minutes.
  3. Add the vegan sausages to the skillet with the onions and cook until browned and heated through, about 5-7 minutes.
  4. Pour in the vegetable broth and add the dried thyme, stirring to combine. Allow it to simmer for an additional 2-3 minutes until slightly thickened.
  5. Once the potatoes are cooked, drain them and return them to the pot. Add the non-dairy milk, vegan butter, garlic powder, salt, and black pepper. Mash until creamy and smooth.
  6. To serve, place a generous scoop of mashed potatoes on each plate, top with the vegan sausages and onion mixture, and drizzle with any remaining broth.
