- ripe bananas - 2 medium (about 200g)
- all-purpose flour - 150g
- granulated sugar - 50g
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- salt - 1/4 tsp
- cinnamon - 1/2 tsp
- plant-based milk - 60ml
- vegetable oil - 30ml
- vanilla extract - 1 tsp
- walnuts - 30g (optional)
Steps
- Preheat the oven to 180°C (350°F) and grease a small loaf pan.
- In a large bowl, mash the ripe bananas with a fork until smooth.
- Add the granulated sugar, vegetable oil, plant-based milk, and vanilla extract to the mashed bananas. Mix well until combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
- Fold in the walnuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
