Ingredients

  • ripe bananas - 2 medium (about 200g)
  • all-purpose flour - 150g
  • granulated sugar - 50g
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • salt - 1/4 tsp
  • cinnamon - 1/2 tsp
  • plant-based milk - 60ml
  • vegetable oil - 30ml
  • vanilla extract - 1 tsp
  • walnuts - 30g (optional)

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small loaf pan.
  2. In a large bowl, mash the ripe bananas with a fork until smooth.
  3. Add the granulated sugar, vegetable oil, plant-based milk, and vanilla extract to the mashed bananas. Mix well until combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
  6. Fold in the walnuts if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
