  • Smoked paprika - 1 teaspoon
  • Liquid smoke - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Maple syrup - 1 teaspoon
  • Bagels - 2, your choice of type
  • Vegan cream cheese - 100 grams
  • Capers - 2 tablespoons, drained
  • Red onion - 1/4, thinly sliced
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2, sliced
  • Fresh dill - a handful, chopped
  • Lemon - 1, cut into wedges

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the carrots into thin strips or julienne them, then place them in a bowl.
  3. In a small bowl, mix together the smoked paprika, liquid smoke, soy sauce, and maple syrup. Pour this marinade over the carrots and toss to coat well.
  4. Arrange the marinated carrots on a baking sheet lined with parchment paper and roast in the preheated oven for 20 minutes, flipping halfway through until they are tender and slightly caramelized.
  5. While the carrots are roasting, toast the bagels to your desired level of crispiness.
  6. Spread the vegan cream cheese generously on each toasted bagel half.
  7. Top the cream cheese with the roasted carrot 'lox', capers, red onion slices, tomato slices, cucumber slices, and chopped dill.
  8. Serve with lemon wedges on the side for an extra zesty kick.
