- Pasta (spaghetti or fettuccine) - 200 grams
- Canned artichoke hearts - 1 cup, drained and chopped
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Cherry tomatoes - 1 cup, halved
- Spinach - 2 cups, fresh
- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - for garnish
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the chopped artichoke hearts and halved cherry tomatoes to the skillet. Cook for 3-4 minutes until the tomatoes begin to soften.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Add the cooked pasta to the skillet, along with the reserved pasta water, nutritional yeast, lemon juice, salt, and black pepper. Toss everything together until well combined and heated through.
- Serve hot, garnished with fresh basil.
