Ingredients

  • Pasta (spaghetti or fettuccine) - 200 grams
  • Canned artichoke hearts - 1 cup, drained and chopped
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 1 cup, halved
  • Spinach - 2 cups, fresh
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - for garnish

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chopped artichoke hearts and halved cherry tomatoes to the skillet. Cook for 3-4 minutes until the tomatoes begin to soften.
  4. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  5. Add the cooked pasta to the skillet, along with the reserved pasta water, nutritional yeast, lemon juice, salt, and black pepper. Toss everything together until well combined and heated through.
  6. Serve hot, garnished with fresh basil.
