Ingredients

  • Canned artichoke hearts - 200 grams, drained and chopped
  • Raw cashews - 50 grams, soaked for 2-4 hours
  • Nutritional yeast - 2 tablespoons
  • Garlic - 1 clove, minced
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped (for garnish)
  • Vegetable broth - 2 tablespoons

Steps

  1. In a blender or food processor, combine the soaked cashews, nutritional yeast, minced garlic, lemon juice, olive oil, salt, black pepper, and vegetable broth.
  2. Blend until smooth and creamy, scraping down the sides as needed.
  3. In a mixing bowl, combine the chopped artichoke hearts with the blended cashew mixture and stir until well combined.
  4. Transfer the mixture to a small oven-safe dish and spread it evenly.
  5. Preheat the oven to 180°C (350°F).
  6. Bake the dip for 15 minutes, or until heated through and slightly golden on top.
