  • Maple syrup - 2 tablespoons
  • Cold water - 3 to 4 tablespoons
  • Granny Smith apples - 3 medium, peeled and sliced
  • Brown sugar - 1/4 cup
  • Cinnamon - 1 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vanilla extract - 1/2 teaspoon

Steps

  1. In a mixing bowl, combine the flour and solid coconut oil, and mix until crumbly.
  2. Add maple syrup and cold water, one tablespoon at a time, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. Preheat the oven to 180°C (350°F).
  4. In another bowl, toss the sliced apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until well coated.
  5. Roll out the chilled dough on a floured surface to fit a small pie dish. Place the rolled dough in the dish and trim the edges.
  6. Fill the pie crust with the apple mixture, spreading it evenly.
  7. Roll out any remaining dough to create a lattice top or cover the pie with another layer, sealing the edges.
  8. Cut slits in the top crust if using a solid layer, then brush with a little water or additional maple syrup.
  9. Bake in the preheated oven for 30-35 minutes, or until the apples are tender and the crust is golden brown.
