Ingredients
- All-purpose flour - 1 1/2 cups
- Coconut oil - 1/4 cup, solid
- Maple syrup - 2 tablespoons
- Cold water - 3 to 4 tablespoons
- Granny Smith apples - 3 medium, peeled and sliced
- Brown sugar - 1/4 cup
- Cinnamon - 1 teaspoon
- Nutmeg - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vanilla extract - 1/2 teaspoon
Steps
- In a mixing bowl, combine the flour and solid coconut oil, and mix until crumbly.
- Add maple syrup and cold water, one tablespoon at a time, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 180°C (350°F).
- In another bowl, toss the sliced apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until well coated.
- Roll out the chilled dough on a floured surface to fit a small pie dish. Place the rolled dough in the dish and trim the edges.
- Fill the pie crust with the apple mixture, spreading it evenly.
- Roll out any remaining dough to create a lattice top or cover the pie with another layer, sealing the edges.
- Cut slits in the top crust if using a solid layer, then brush with a little water or additional maple syrup.
- Bake in the preheated oven for 30-35 minutes, or until the apples are tender and the crust is golden brown.
- Allow to cool slightly before serving.
