- Cherry tomatoes - 10 pieces
- Cucumber - 1 medium, sliced
- Bell pepper (any color) - 1, cut into 1-inch pieces
- Black olives - 10 pieces
- Artichoke hearts (canned or jarred) - 4 pieces, quartered
- Marinated tempeh - 100 grams, cubed
- Fresh basil leaves - 10 leaves
- Balsamic glaze - 2 tablespoons
- Olive oil - 1 tablespoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a bowl, combine the olive oil, balsamic glaze, salt, and black pepper; mix well.
- Add the cubed marinated tempeh to the bowl and let it marinate for about 5 minutes.
- While the tempeh is marinating, prepare the vegetables: wash the cherry tomatoes, slice the cucumber, cut the bell pepper into pieces, and quarter the artichoke hearts.
- Once the tempeh is marinated, take skewers and start assembling: alternate the cherry tomatoes, cucumber slices, bell pepper pieces, olives, artichoke hearts, tempeh cubes, and basil leaves onto each skewer.
- Repeat until all ingredients are used, creating 4 skewers.
- Serve the skewers on a platter and drizzle with any remaining marinade from the bowl.
