Ingredients

  • Cherry tomatoes - 10 pieces
  • Cucumber - 1 medium, sliced
  • Bell pepper (any color) - 1, cut into 1-inch pieces
  • Black olives - 10 pieces
  • Artichoke hearts (canned or jarred) - 4 pieces, quartered
  • Marinated tempeh - 100 grams, cubed
  • Fresh basil leaves - 10 leaves
  • Balsamic glaze - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a bowl, combine the olive oil, balsamic glaze, salt, and black pepper; mix well.
  2. Add the cubed marinated tempeh to the bowl and let it marinate for about 5 minutes.
  3. While the tempeh is marinating, prepare the vegetables: wash the cherry tomatoes, slice the cucumber, cut the bell pepper into pieces, and quarter the artichoke hearts.
  4. Once the tempeh is marinated, take skewers and start assembling: alternate the cherry tomatoes, cucumber slices, bell pepper pieces, olives, artichoke hearts, tempeh cubes, and basil leaves onto each skewer.
  5. Repeat until all ingredients are used, creating 4 skewers.
  6. Serve the skewers on a platter and drizzle with any remaining marinade from the bowl.
