Ingredients

  • Almond flour - 100 grams
  • Unsweetened shredded coconut - 50 grams
  • Maple syrup - 3 tablespoons
  • Coconut oil - 2 tablespoons, melted
  • Almond butter - 2 tablespoons
  • Dark vegan chocolate chips - 100 grams
  • Almonds - 10 whole

Steps

  1. In a mixing bowl, combine almond flour, shredded coconut, maple syrup, melted coconut oil, and almond butter until well mixed.
  2. Press the mixture into the bottom of a lined 8x4 inch (20x10 cm) loaf pan to form an even layer.
  3. Melt the dark vegan chocolate chips in a microwave or double boiler until smooth.
  4. Pour half of the melted chocolate over the almond-coconut layer in the pan, spreading it evenly.
  5. Place whole almonds on top of the chocolate layer, then pour the remaining melted chocolate over the almonds, spreading it to cover them.
  6. Refrigerate the bars for at least 20 minutes until the chocolate is set.
  7. Once set, remove from the pan and cut into bars.
