Ingredients

  • Heavy cream - 240 ml
  • Unsweetened almond milk - 60 ml
  • Granulated erythritol - 2 tablespoons (30 g)
  • Vanilla extract - 1 teaspoon
  • Gelatin powder - 1 teaspoon (3 g)
  • Water - 2 tablespoons (30 ml)
  • Pinch of salt

Steps

  1. In a small bowl, sprinkle the gelatin powder over the 2 tablespoons of water and let it sit for about 5 minutes to bloom.
  2. In a saucepan over medium heat, combine the heavy cream, almond milk, erythritol, vanilla extract, and a pinch of salt. Stir occasionally until the mixture is warm but not boiling.
  3. Remove the saucepan from the heat and add the bloomed gelatin to the cream mixture. Stir until the gelatin is completely dissolved.
  4. Pour the mixture into two dessert cups or molds and let them cool to room temperature.
  5. Once cooled, cover and refrigerate for at least 4 hours or until set.
  6. To serve, run a knife around the edges of the panna cotta and invert onto a plate, if desired.
