Ingredients
- Heavy cream - 240 ml
- Unsweetened almond milk - 60 ml
- Granulated erythritol - 2 tablespoons (30 g)
- Vanilla extract - 1 teaspoon
- Gelatin powder - 1 teaspoon (3 g)
- Water - 2 tablespoons (30 ml)
- Pinch of salt
Steps
- In a small bowl, sprinkle the gelatin powder over the 2 tablespoons of water and let it sit for about 5 minutes to bloom.
- In a saucepan over medium heat, combine the heavy cream, almond milk, erythritol, vanilla extract, and a pinch of salt. Stir occasionally until the mixture is warm but not boiling.
- Remove the saucepan from the heat and add the bloomed gelatin to the cream mixture. Stir until the gelatin is completely dissolved.
- Pour the mixture into two dessert cups or molds and let them cool to room temperature.
- Once cooled, cover and refrigerate for at least 4 hours or until set.
- To serve, run a knife around the edges of the panna cotta and invert onto a plate, if desired.
