- Carrots - 2 medium (about 150g)
- Dried apricots - 100g, chopped
- Prunes - 100g, pitted and chopped
- Honey - 2 tablespoons (30ml)
- Cinnamon - 1 teaspoon (2g)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
- Olive oil - 2 tablespoons (30ml)
- Water - 1 cup (240ml)
Steps
- Preheat the oven to 180°C (350°F).
- Peel and chop the sweet potatoes and carrots into bite-sized pieces.
- In a large mixing bowl, combine the sweet potatoes, carrots, chopped dried apricots, and chopped prunes.
- In a separate small bowl, mix together the honey, cinnamon, salt, black pepper, and olive oil.
- Pour the honey mixture over the sweet potato and carrot mixture, and toss until everything is well coated.
- Transfer the mixture to a baking dish and add the water.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and stir the tzimmes.
- Return to the oven uncovered and bake for an additional 15-20 minutes, or until the sweet potatoes and carrots are tender and caramelized.
- Let cool for a few minutes before serving.
