- Unsalted butter - 60 grams, chilled and cubed
- Granulated sugar - 30 grams
- Salt - 1/4 teaspoon
- Ice water - 2 tablespoons
- Carrots - 100 grams, peeled and grated
- Sweet potato - 100 grams, peeled and grated
- Dried apricots - 50 grams, chopped
- Dried prunes - 50 grams, chopped
- Honey - 2 tablespoons
- Cinnamon - 1/2 teaspoon
- Nutmeg - 1/4 teaspoon
- Egg - 1, beaten (for egg wash)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the flour, chilled butter, sugar, and salt. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
- Add the ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- While the dough chills, prepare the filling. In a bowl, mix the grated carrots, grated sweet potato, chopped dried apricots, chopped dried prunes, honey, cinnamon, and nutmeg until well combined.
- Roll out the chilled dough on a floured surface to fit a 9-inch tart pan. Place the rolled-out dough into the tart pan, pressing it into the corners and trimming any excess.
- Fill the tart shell with the carrot and sweet potato mixture, spreading it evenly.
- Brush the edges of the tart crust with the beaten egg for a golden finish.
- Bake in the preheated oven for 30-35 minutes, or until the filling is set and the crust is lightly golden.
- Allow the tart to cool slightly before slicing and serving.
