- Sweet potatoes - 200 grams, peeled and cubed
- Prunes - 100 grams, pitted and chopped
- Dried apricots - 50 grams, chopped
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Vegetable broth - 500 milliliters
- Honey - 2 tablespoons
- Cinnamon - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the sliced carrots and cubed sweet potatoes to the pot, stirring to combine with the onion and garlic.
- Pour in the vegetable broth, followed by the chopped prunes, dried apricots, honey, cinnamon, salt, and black pepper. Stir well to mix all the ingredients.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 40 minutes, or until the vegetables are tender.
- Once cooked, taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
