  • Sweet potatoes - 200 grams, peeled and cubed
  • Prunes - 100 grams, pitted and chopped
  • Dried apricots - 50 grams, chopped
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Vegetable broth - 500 milliliters
  • Honey - 2 tablespoons
  • Cinnamon - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  2. Add the sliced carrots and cubed sweet potatoes to the pot, stirring to combine with the onion and garlic.
  3. Pour in the vegetable broth, followed by the chopped prunes, dried apricots, honey, cinnamon, salt, and black pepper. Stir well to mix all the ingredients.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 40 minutes, or until the vegetables are tender.
  5. Once cooked, taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
