- Sweet potatoes - 150 grams, diced
- Dried apricots - 50 grams, chopped
- Prunes - 50 grams, chopped
- Honey - 2 tablespoons
- Olive oil - 1 tablespoon
- Ground cinnamon - 1 teaspoon
- Ground ginger - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Chopped walnuts - 30 grams
Steps
- Preheat the oven to 190°C (375°F).
- In a bowl, combine the diced carrots, sweet potatoes, dried apricots, prunes, honey, olive oil, ground cinnamon, ground ginger, salt, and black pepper.
- Mix all the ingredients thoroughly until the vegetables and fruits are well coated.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Roast in the oven for 25-30 minutes, or until the sweet potatoes and carrots are tender and slightly caramelized.
