Ingredients

  • Carrots - 150 grams, diced
  • Sweet potatoes - 150 grams, diced
  • Dried apricots - 50 grams, chopped
  • Prunes - 50 grams, chopped
  • Honey - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Ground cinnamon - 1 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped walnuts - 30 grams

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a bowl, combine the diced carrots, sweet potatoes, dried apricots, prunes, honey, olive oil, ground cinnamon, ground ginger, salt, and black pepper.
  3. Mix all the ingredients thoroughly until the vegetables and fruits are well coated.
  4. Spread the mixture evenly on a baking sheet lined with parchment paper.
  5. Roast in the oven for 25-30 minutes, or until the sweet potatoes and carrots are tender and slightly caramelized.
  6. Remove from the oven and let cool slightly before mixing in the chopped walnuts.
