- Sweet potatoes - 150 grams, peeled and diced
- Dried apricots - 50 grams, chopped
- Prunes - 50 grams, chopped
- Walnuts - 30 grams, chopped
- Honey - 2 tablespoons (30 ml)
- Cinnamon - 1 teaspoon
- Nutmeg - 1/4 teaspoon
- Oats - 50 grams
- Salt - 1/4 teaspoon
- Olive oil - 1 tablespoon (15 ml)
Steps
- Preheat your oven to 175°C (350°F) and line an 8x8 inch (20x20 cm) baking pan with parchment paper.
- In a medium saucepan, boil the diced sweet potatoes in water for about 10-15 minutes until tender. Drain and mash them in a bowl.
- Add the chopped dried apricots, prunes, walnuts, honey, cinnamon, nutmeg, oats, and salt to the mashed sweet potatoes. Mix until well combined.
- Spread the mixture evenly into the prepared baking pan, pressing down firmly to create an even layer.
- Drizzle the olive oil over the top and bake in the preheated oven for 25-30 minutes or until the edges are lightly golden.
- Remove from the oven and let it cool completely in the pan before lifting out and cutting into bars.
