Ingredients

  • Sweet potatoes - 150 grams, peeled and diced
  • Dried apricots - 50 grams, chopped
  • Prunes - 50 grams, chopped
  • Walnuts - 30 grams, chopped
  • Honey - 2 tablespoons (30 ml)
  • Cinnamon - 1 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Oats - 50 grams
  • Salt - 1/4 teaspoon
  • Olive oil - 1 tablespoon (15 ml)

Steps

  1. Preheat your oven to 175°C (350°F) and line an 8x8 inch (20x20 cm) baking pan with parchment paper.
  2. In a medium saucepan, boil the diced sweet potatoes in water for about 10-15 minutes until tender. Drain and mash them in a bowl.
  3. Add the chopped dried apricots, prunes, walnuts, honey, cinnamon, nutmeg, oats, and salt to the mashed sweet potatoes. Mix until well combined.
  4. Spread the mixture evenly into the prepared baking pan, pressing down firmly to create an even layer.
  5. Drizzle the olive oil over the top and bake in the preheated oven for 25-30 minutes or until the edges are lightly golden.
  6. Remove from the oven and let it cool completely in the pan before lifting out and cutting into bars.
