- Carrots - 2 medium, peeled and sliced
- Sweet potato - 1 medium, peeled and cubed
- Dried apricots - 100 grams, chopped
- Prunes - 50 grams, pitted and chopped
- Honey - 2 tablespoons
- Olive oil - 1 tablespoon
- Cinnamon - 1/2 teaspoon
- Nutmeg - 1/4 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 200 ml
Steps
- Preheat the oven to 180°C (350°F).
- In a large bowl, combine the sliced carrots, cubed sweet potato, chopped dried apricots, and chopped prunes.
- In a separate small bowl, mix together the honey, olive oil, cinnamon, nutmeg, salt, and black pepper.
- Pour the honey mixture over the vegetable and fruit mixture, tossing to coat evenly.
- Transfer the mixture to a baking dish and add the water, stirring gently to combine.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and stir the tzimmes, then return to the oven uncovered for an additional 15 minutes, or until the vegetables are tender and caramelized.
- Remove from the oven and let cool slightly before serving.
