Ingredients

  • Carrots - 2 medium, peeled and sliced
  • Sweet potato - 1 medium, peeled and cubed
  • Dried apricots - 100 grams, chopped
  • Prunes - 50 grams, pitted and chopped
  • Honey - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Cinnamon - 1/2 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 200 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, combine the sliced carrots, cubed sweet potato, chopped dried apricots, and chopped prunes.
  3. In a separate small bowl, mix together the honey, olive oil, cinnamon, nutmeg, salt, and black pepper.
  4. Pour the honey mixture over the vegetable and fruit mixture, tossing to coat evenly.
  5. Transfer the mixture to a baking dish and add the water, stirring gently to combine.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  7. After 30 minutes, remove the foil and stir the tzimmes, then return to the oven uncovered for an additional 15 minutes, or until the vegetables are tender and caramelized.
  8. Remove from the oven and let cool slightly before serving.
