  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Onion - 1 medium, chopped
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth (low sodium) - 500 ml
  • Dried thyme - 1 teaspoon
  • Dried rosemary - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh spinach - 100 g
  • Parmesan cheese - 30 g, grated (for serving)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.
  2. Add the minced garlic, dried thyme, and dried rosemary. Sauté for an additional 2 minutes until fragrant.
  3. Drain and rinse the canned white beans, then add them to the pot along with the vegetable broth. Bring to a simmer.
  4. Reduce the heat to low and let the soup cook for 15 minutes, allowing the flavors to meld together.
  5. Stir in the fresh spinach and cook for another 2-3 minutes until wilted. Season with salt and black pepper to taste.
