- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Onion - 1 medium, chopped
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth (low sodium) - 500 ml
- Dried thyme - 1 teaspoon
- Dried rosemary - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh spinach - 100 g
- Parmesan cheese - 30 g, grated (for serving)
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Add the minced garlic, dried thyme, and dried rosemary. Sauté for an additional 2 minutes until fragrant.
- Drain and rinse the canned white beans, then add them to the pot along with the vegetable broth. Bring to a simmer.
- Reduce the heat to low and let the soup cook for 15 minutes, allowing the flavors to meld together.
- Stir in the fresh spinach and cook for another 2-3 minutes until wilted. Season with salt and black pepper to taste.
