  • Ground turkey - 300 grams
  • Egg - 1 large
  • Almond flour - 30 grams
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Zucchini - 2 medium
  • Marinara sauce - 100 grams (low sugar)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the ground turkey, egg, almond flour, garlic powder, onion powder, oregano, salt, and pepper. Mix until just combined.
  3. Form the mixture into 12 meatballs, about 25 grams each, and place them on a baking sheet lined with parchment paper.
  4. Drizzle the meatballs with olive oil and bake in the preheated oven for 20 minutes or until cooked through.
  5. While the meatballs are baking, spiralize the zucchini using a spiralizer to create zoodles.
  6. In a large skillet over medium heat, add the zoodles and sauté for 3-4 minutes until slightly softened.
  7. Add the marinara sauce to the skillet and stir to combine with the zoodles, cooking for an additional 2 minutes.
  8. Serve the turkey meatballs over the zoodles with extra marinara sauce if desired.
