- Cooked turkey breast, shredded - 200 grams
- Wild rice - 100 grams
- Carrots, diced - 1 medium (about 100 grams)
- Celery, diced - 1 stalk (about 50 grams)
- Onion, chopped - 1 small (about 70 grams)
- Garlic, minced - 2 cloves
- Chicken broth - 750 ml
- Olive oil - 1 tablespoon
- Thyme, dried - 1 teaspoon
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - 2 tablespoons
Steps
- In a large pot, heat olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until the vegetables are tender.
- Add minced garlic and cook for another minute until fragrant.
- Stir in the dried thyme, bay leaf, salt, and black pepper. Cook for an additional minute.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the wild rice and reduce the heat to low. Cover and simmer for 30 minutes, or until the rice is cooked and tender.
- Once the rice is cooked, stir in the shredded turkey and let it heat through for about 5 minutes.
- Remove the bay leaf, adjust seasoning to taste, and serve hot, garnished with fresh parsley.
