  • Green beans - 150 grams
  • New potatoes - 200 grams
  • Cherry tomatoes - 150 grams
  • Canned tuna (in water) - 200 grams
  • Eggs - 2 large
  • Black olives (pitted) - 50 grams
  • Extra virgin olive oil - 3 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil leaves - a handful

Steps

  1. Start by boiling the new potatoes in salted water for about 15 minutes or until tender. Drain and let cool slightly before slicing them in half.
  2. In the same pot, add the green beans and cook for about 5 minutes until bright green and tender-crisp. Drain and immediately plunge into ice water to stop the cooking process.
  3. While the potatoes and beans are cooking, place the eggs in a small saucepan, cover with water, and bring to a boil. Once boiling, cover the pot and remove from heat. Let sit for 10-12 minutes, then cool in ice water before peeling.
  4. In a large bowl, combine the cooked potatoes, green beans, halved cherry tomatoes, and drained tuna. Add the olives.
  5. In a separate small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to make the dressing.
  6. Drizzle the dressing over the salad, tossing gently to combine. Slice the eggs and arrange them on top of the salad.
  7. Garnish with fresh basil leaves before serving.
