- Green beans - 150 grams
- New potatoes - 200 grams
- Cherry tomatoes - 150 grams
- Canned tuna (in water) - 200 grams
- Eggs - 2 large
- Black olives (pitted) - 50 grams
- Extra virgin olive oil - 3 tablespoons
- Red wine vinegar - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil leaves - a handful
Steps
- Start by boiling the new potatoes in salted water for about 15 minutes or until tender. Drain and let cool slightly before slicing them in half.
- In the same pot, add the green beans and cook for about 5 minutes until bright green and tender-crisp. Drain and immediately plunge into ice water to stop the cooking process.
- While the potatoes and beans are cooking, place the eggs in a small saucepan, cover with water, and bring to a boil. Once boiling, cover the pot and remove from heat. Let sit for 10-12 minutes, then cool in ice water before peeling.
- In a large bowl, combine the cooked potatoes, green beans, halved cherry tomatoes, and drained tuna. Add the olives.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to make the dressing.
- Drizzle the dressing over the salad, tossing gently to combine. Slice the eggs and arrange them on top of the salad.
