  • Canned diced tomatoes - 400g
  • Fish stock - 500ml
  • Ground cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • White fish fillets (e.g., cod or tilapia) - 200g
  • Corn tortillas - 2, cut into strips
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime, juiced - 1 lime
  • Avocado, diced - 1/2 fruit
  • Sour cream or Greek yogurt - 2 tablespoons (optional)

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for 5 minutes until translucent.
  2. Add the minced garlic and diced red bell pepper, and cook for another 3 minutes until softened.
  3. Stir in the canned diced tomatoes, fish stock, ground cumin, chili powder, salt, and black pepper. Bring to a simmer and cook for 10 minutes.
  4. Add the fish fillets to the pot and simmer for an additional 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
  5. While the soup is simmering, heat a small skillet over medium heat and lightly toast the tortilla strips until crispy, about 2-3 minutes.
  6. Once the fish is cooked, remove the pot from heat and stir in the lime juice and fresh cilantro.
