- Red bell pepper - 1, diced
- Jalapeño - 1, minced (adjust to taste)
- Diced tomatoes - 400 grams (1 can)
- Chicken broth - 500 milliliters
- Ground cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cooked chicken breast - 150 grams, shredded
- Corn tortillas - 2, cut into strips
- Avocado - 1 small, diced
- Cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, red bell pepper, and jalapeño, cooking for another 3-4 minutes until softened.
- Add the diced tomatoes, chicken broth, ground cumin, chili powder, salt, and black pepper to the pot. Bring to a simmer and let cook for 10 minutes.
- Stir in the shredded cooked chicken and let it heat through for an additional 5 minutes.
- While the soup simmers, heat a small skillet over medium heat. Add the tortilla strips and fry until golden and crispy, about 2-3 minutes. Remove and drain on paper towels.
- To serve, ladle the soup into bowls, top with crispy tortilla strips, diced avocado, and chopped cilantro. Squeeze fresh lime juice over the top.
