- zucchini, diced - 100 grams
- olive oil - 2 tablespoons

- black pepper - 1/4 teaspoon
- fresh parsley, chopped - 1 tablespoon
Steps
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Add the sliced potatoes and onions, season with salt, and sauté until the potatoes are tender and lightly golden, about 10-12 minutes.
- In a separate bowl, whisk the eggs with black pepper, then stir in the diced red bell pepper and zucchini.
- Once the potatoes and onions are cooked, drain any excess oil and add them to the egg mixture, mixing well.
- Wipe the skillet clean and add the remaining tablespoon of olive oil, heating it over medium-low heat.
- Pour the egg and vegetable mixture into the skillet, spreading it evenly.
