  • Red bell pepper - 1/2, diced
  • Canned diced tomatoes - 400 grams
  • Chicken broth - 750 milliliters
  • Italian seasoning - 1 teaspoon
  • Fresh spinach - 100 grams
  • Cheese tortellini - 250 grams
  • Cooked chicken breast - 150 grams, shredded
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - for serving, grated

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic, diced onion, carrot, celery, and red bell pepper. Sauté for about 5 minutes, until the vegetables are softened.
  2. Stir in the canned diced tomatoes and chicken broth, then add the Italian seasoning. Bring the mixture to a boil.
  3. Once boiling, reduce the heat to a simmer. Add the cheese tortellini and cook for about 5-7 minutes, or until they float to the top and are tender.
