- Canned diced tomatoes - 400 grams
- Chicken broth - 750 milliliters
- Italian seasoning - 1 teaspoon
- Fresh spinach - 100 grams
- Cheese tortellini - 250 grams
- Cooked chicken breast - 150 grams, shredded
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - for serving, grated
Steps
- In a large pot, heat the olive oil over medium heat. Add the minced garlic, diced onion, carrot, celery, and red bell pepper. Sauté for about 5 minutes, until the vegetables are softened.
- Stir in the canned diced tomatoes and chicken broth, then add the Italian seasoning. Bring the mixture to a boil.
- Once boiling, reduce the heat to a simmer. Add the cheese tortellini and cook for about 5-7 minutes, or until they float to the top and are tender.
