Ingredients

  • Olive oil - 2 tablespoons

  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Canned whole tomatoes - 400 grams (14 oz), with juice
  • Vegetable broth - 500 ml (2 cups)
  • Basil - 1 teaspoon, dried
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Sugar - 1 teaspoon (optional, to balance acidity)
  • Fresh basil - for garnish (optional)
  • Vegan cream (or dairy cream) - 50 ml, for serving (optional)

Steps

  1. Heat the olive oil in a medium pot over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté for about 5-7 minutes until the vegetables are softened.
  2. Stir in the canned tomatoes (with juice), vegetable broth, dried basil, dried oregano, salt, and black pepper. If desired, add sugar to balance the acidity.
  3. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 15-20 minutes, stirring occasionally.
  4. Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a countertop blender and blend until smooth.
  5. Taste and adjust seasoning if necessary. If using, stir in the vegan cream or dairy cream for a richer flavor.
  6. Serve hot, garnished with fresh basil if desired.
