- Fresh tomatoes - 2 medium (about 300g), diced
- Water - 2 cups (500ml)
- Onion - 1 small (about 100g), finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons (30ml)
- Vegetable broth - 1/2 cup (125ml)
- Salt - 1 teaspoon (5g)
- Black pepper - 1/2 teaspoon (2g)
- Cumin powder - 1/2 teaspoon (2g)
- Paprika - 1/2 teaspoon (2g)
- Fresh parsley - 2 tablespoons, chopped (optional for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the diced tomatoes, cumin powder, paprika, salt, and black pepper. Cook for about 5-7 minutes until the tomatoes soften and release their juices.
- Drain the soaked rice and add it to the pot, stirring to combine with the tomato mixture.
- Pour in the vegetable broth and 2 cups of water. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- Simmer for about 15-18 minutes, or until the rice is cooked and has absorbed all the liquid. Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork and garnish with chopped fresh parsley before serving.
