Ingredients

  • Basmati rice - 1 cup (200g)
  • Fresh tomatoes - 2 medium (about 300g), diced
  • Water - 2 cups (500ml)
  • Onion - 1 small (about 100g), finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons (30ml)
  • Vegetable broth - 1/2 cup (125ml)
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/2 teaspoon (2g)
  • Cumin powder - 1/2 teaspoon (2g)
  • Paprika - 1/2 teaspoon (2g)
  • Fresh parsley - 2 tablespoons, chopped (optional for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the diced tomatoes, cumin powder, paprika, salt, and black pepper. Cook for about 5-7 minutes until the tomatoes soften and release their juices.
  5. Drain the soaked rice and add it to the pot, stirring to combine with the tomato mixture.
  6. Pour in the vegetable broth and 2 cups of water. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  7. Simmer for about 15-18 minutes, or until the rice is cooked and has absorbed all the liquid. Remove from heat and let it sit, covered, for an additional 5 minutes.
  8. Fluff the rice with a fork and garnish with chopped fresh parsley before serving.
