  • Onion - 1 small, diced
  • Vegetable broth - 250 ml
  • Salt - 1/2 teaspoon, or to taste
  • Black pepper - 1/4 teaspoon, or to taste
  • Balsamic vinegar - 1 teaspoon
  • Heavy cream - 2 tablespoons (optional, for garnish)

Steps

  1. Heat olive oil in a medium saucepan over medium heat. Add the diced onion and minced garlic, sautéing until translucent, about 5 minutes.
  2. Add the chopped tomatoes to the saucepan and cook for another 10 minutes, stirring occasionally, until the tomatoes have softened.
  3. Pour in the vegetable broth and bring the mixture to a simmer. Season with salt and black pepper, and add the balsamic vinegar.
  4. Simmer for an additional 10 minutes to let the flavors meld together.
  5. Remove from heat and add the fresh basil leaves, stirring to combine. Allow the soup to cool slightly.
  6. Using an immersion blender or a regular blender, puree the soup until smooth. If using a regular blender, be sure to let the mixture cool a bit before blending to avoid splatters.
  7. Taste and adjust seasoning if necessary. If the soup is too thick, you can add a bit more vegetable broth to reach desired consistency.
  8. Pour the soup into shooter glasses and, if desired, drizzle with heavy cream for garnish. Serve warm.
