Ingredients

  • Firm tofu - 300 grams
  • Olive oil - 1 tablespoon
  • Red bell pepper - 1 medium, diced
  • Spinach - 100 grams, chopped
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Turmeric powder - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Black salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutritional yeast - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Press the firm tofu for about 10 minutes to remove excess moisture, then crumble it into small pieces.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent.
  3. Add the minced garlic and diced red bell pepper to the skillet and cook for an additional 2 minutes, stirring frequently.
  4. Stir in the crumbled tofu, turmeric, cumin, black salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly golden.
  5. Add the chopped spinach and nutritional yeast, mixing well. Cook for another 2-3 minutes until the spinach wilts.
  6. Remove from heat and garnish with fresh parsley before serving. Enjoy your tofu scramble warm!
