- Firm tofu - 300 grams
- Olive oil - 1 tablespoon
- Red bell pepper - 1 medium, diced
- Spinach - 100 grams, chopped
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Turmeric powder - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Black salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutritional yeast - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Press the firm tofu for about 10 minutes to remove excess moisture, then crumble it into small pieces.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent.
- Add the minced garlic and diced red bell pepper to the skillet and cook for an additional 2 minutes, stirring frequently.
- Stir in the crumbled tofu, turmeric, cumin, black salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly golden.
- Add the chopped spinach and nutritional yeast, mixing well. Cook for another 2-3 minutes until the spinach wilts.
