Ingredients

  • Firm tofu - 200 grams
  • Soy sauce - 2 tablespoons
  • Worcestershire sauce (vegan) - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Rye bread - 4 slices
  • Vegan cheese slices - 4 slices
  • Sauerkraut - 1/2 cup
  • Dijon mustard - 2 tablespoons
  • Olive oil - 2 tablespoons

Steps

  1. Press the firm tofu for 15 minutes to remove excess moisture, then slice it into 1 cm thick slabs.
  2. In a shallow dish, mix soy sauce, Worcestershire sauce, smoked paprika, and black pepper. Marinate the tofu slices in this mixture for at least 10 minutes.
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the marinated tofu slices and cook for 3-4 minutes on each side until golden brown.
  4. While the tofu is cooking, toast the rye bread slices in a toaster or in another skillet until crispy.
  5. Once the tofu is cooked, assemble the sandwiches by spreading Dijon mustard on one side of each slice of bread.
  6. Layer each sandwich with a slice of vegan cheese, cooked tofu, sauerkraut, and another slice of vegan cheese. Top with the remaining slices of bread, mustard side down.
  7. In the same skillet, add the remaining tablespoon of olive oil. Grill the assembled sandwiches for about 3-4 minutes per side, or until the bread is golden and the cheese has melted.
  8. Remove from heat, cut in half, and serve immediately.
