Ingredients

  • Firm tofu - 200 grams
  • Soy sauce - 2 tablespoons
  • Liquid smoke - 1 teaspoon
  • Caraway seeds - 1 teaspoon
  • Rye bread - 4 slices
  • Sauerkraut - 100 grams
  • Vegan mayonnaise - 2 tablespoons
  • Dijon mustard - 1 tablespoon
  • Vegan cheese (optional) - 2 slices
  • Olive oil - 2 tablespoons

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into 1/2 inch thick slices.
  2. In a bowl, mix soy sauce, liquid smoke, and caraway seeds. Marinate the tofu slices in this mixture for at least 10 minutes.
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the marinated tofu slices and cook for about 5 minutes on each side or until golden brown.
  4. In a small bowl, combine vegan mayonnaise and Dijon mustard to create the dressing.
  5. Toast the rye bread in a toaster or skillet until crispy.
  6. On two slices of toasted rye bread, spread the dressing, then layer with tofu, sauerkraut, and vegan cheese if using.
  7. Top with the remaining slices of bread and grill the sandwiches in the skillet with the remaining olive oil for 3-4 minutes on each side until golden brown.
  8. Slice in half and serve hot.
