- Firm tofu - 200 grams
- Lime juice - 60 ml
- Red onion - 1 small, finely chopped
- Cherry tomatoes - 100 grams, quartered
- Cucumber - 100 grams, diced
- Fresh cilantro - 2 tablespoons, chopped
- Jalapeño pepper - 1 small, finely chopped (optional)
- Avocado - 1 small, diced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- Press the firm tofu to remove excess moisture for about 15 minutes, then cut it into small cubes.
- In a mixing bowl, combine the lime juice, salt, and black pepper, and add the tofu cubes. Toss gently to coat and let it marinate for 10 minutes.
- While the tofu marinates, prepare the vegetables: finely chop the red onion, quarter the cherry tomatoes, dice the cucumber, and chop the cilantro.
- After the marination, add the chopped vegetables, cilantro, jalapeño (if using), and olive oil to the tofu bowl. Gently mix until combined.
- Finally, fold in the diced avocado just before serving to maintain its texture. Serve chilled or at room temperature.
