Ingredients

  • Cauliflower - 250 grams
  • Egg - 1 large
  • Almond flour - 50 grams
  • Seaweed (dried nori or kombu) - 20 grams, chopped
  • Olive oil - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato sauce - 100 grams
  • Fresh spinach - 50 grams
  • Cherry tomatoes - 100 grams, halved
  • Mozzarella cheese (dairy-free if desired) - 100 grams, shredded
  • Fresh basil - a handful, for garnish

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Rice the cauliflower by grating it or processing it in a food processor until it resembles rice grains.
  3. Steam the riced cauliflower for about 5 minutes until slightly tender. Let it cool, then squeeze out excess moisture using a clean kitchen towel.
  4. In a mixing bowl, combine the riced cauliflower, egg, almond flour, chopped seaweed, garlic powder, salt, and black pepper. Mix until well combined.
  5. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes, or until golden and crispy.
  7. While the crust is baking, prepare the toppings by heating the olive oil in a pan over medium heat. Add the fresh spinach and sauté until wilted.
  8. Once the crust is done, remove it from the oven and spread the tomato sauce evenly over the surface.
  9. Top with sautéed spinach, halved cherry tomatoes, and shredded mozzarella cheese.
  10. Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  11. Remove from the oven, garnish with fresh basil, slice, and serve hot.
