Ingredients
- Cauliflower - 250 grams
- Egg - 1 large
- Almond flour - 50 grams
- Seaweed (dried nori or kombu) - 20 grams, chopped
- Olive oil - 1 tablespoon
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tomato sauce - 100 grams
- Fresh spinach - 50 grams
- Cherry tomatoes - 100 grams, halved
- Mozzarella cheese (dairy-free if desired) - 100 grams, shredded
- Fresh basil - a handful, for garnish
Steps
- Preheat the oven to 220°C (425°F).
- Rice the cauliflower by grating it or processing it in a food processor until it resembles rice grains.
- Steam the riced cauliflower for about 5 minutes until slightly tender. Let it cool, then squeeze out excess moisture using a clean kitchen towel.
- In a mixing bowl, combine the riced cauliflower, egg, almond flour, chopped seaweed, garlic powder, salt, and black pepper. Mix until well combined.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden and crispy.
- While the crust is baking, prepare the toppings by heating the olive oil in a pan over medium heat. Add the fresh spinach and sauté until wilted.
- Once the crust is done, remove it from the oven and spread the tomato sauce evenly over the surface.
- Top with sautéed spinach, halved cherry tomatoes, and shredded mozzarella cheese.
- Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with fresh basil, slice, and serve hot.
