  • Almond flour linguine - 150 grams
  • Fresh salmon fillets - 200 grams
  • Ripe avocado - 1 medium

  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Fresh dill - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Bring a pot of salted water to a boil and cook the almond flour linguine according to package instructions until al dente, usually about 3-4 minutes. Drain and set aside.
  2. While the pasta cooks, heat 1 tablespoon of olive oil in a skillet over medium heat. Season the salmon fillets with salt and pepper, then place them skin-side down in the skillet.
  3. Cook the salmon for about 4-5 minutes on each side, or until cooked through and flaky. Remove from the skillet and let it rest for a few minutes before flaking into bite-sized pieces.
