Ingredients
- Mascarpone cheese - 100 grams
- Heavy cream - 100 ml
- Sugar - 30 grams
- Vanilla extract - 1 teaspoon
- Coffee (strong brewed, cooled) - 100 ml
- Ladyfinger biscuits - 6 pieces
- Cocoa powder - for dusting
Steps
- In a mixing bowl, combine 100 grams of mascarpone cheese with 30 grams of sugar and 1 teaspoon of vanilla extract. Mix until smooth.
- In another bowl, whip 100 ml of heavy cream until soft peaks form, then gently fold it into the mascarpone mixture until well combined.
- Dip 3 ladyfinger biscuits into 100 ml of cooled strong brewed coffee one at a time, making sure they are soaked but not soggy.
- Layer the soaked ladyfingers at the bottom of two serving glasses or bowls.
- Spread half of the mascarpone mixture over the ladyfingers in each glass.
- Repeat the process with the remaining ladyfingers, soaking them in coffee and layering them on top of the mascarpone mixture.
- Finish with the rest of the mascarpone mixture and smooth the top.
- Cover and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, dust the top with cocoa powder.
