Ingredients

  • Mascarpone cheese - 100 grams
  • Heavy cream - 100 ml
  • Sugar - 30 grams
  • Vanilla extract - 1 teaspoon
  • Coffee (strong brewed, cooled) - 100 ml
  • Ladyfinger biscuits - 6 pieces
  • Cocoa powder - for dusting

Steps

  1. In a mixing bowl, combine 100 grams of mascarpone cheese with 30 grams of sugar and 1 teaspoon of vanilla extract. Mix until smooth.
  2. In another bowl, whip 100 ml of heavy cream until soft peaks form, then gently fold it into the mascarpone mixture until well combined.
  3. Dip 3 ladyfinger biscuits into 100 ml of cooled strong brewed coffee one at a time, making sure they are soaked but not soggy.
  4. Layer the soaked ladyfingers at the bottom of two serving glasses or bowls.
  5. Spread half of the mascarpone mixture over the ladyfingers in each glass.
  6. Repeat the process with the remaining ladyfingers, soaking them in coffee and layering them on top of the mascarpone mixture.
  7. Finish with the rest of the mascarpone mixture and smooth the top.
  8. Cover and refrigerate for at least 4 hours, or overnight for best results.
  9. Before serving, dust the top with cocoa powder.
