Ingredients

  • Black beans - 400 grams (canned, drained and rinsed)
  • Oats - 50 grams (rolled)
  • Peanut butter - 2 tablespoons (smooth)
  • Soy sauce - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Cilantro - 2 tablespoons (chopped)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon (for cooking)
  • Burger buns - 2 (whole grain or gluten-free)
  • Lettuce - 2 leaves (for topping)
  • Cucumber - 1/2 (sliced)
  • Carrot - 1 (shredded)
  • Peanut sauce - 4 tablespoons (for drizzling)

Steps

  1. In a mixing bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the oats, peanut butter, soy sauce, garlic powder, ground ginger, chopped cilantro, salt, and black pepper to the bowl and mix until well combined.
  3. Form the mixture into two equal patties.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until golden brown and heated through.
  5. While the patties are cooking, prepare the toppings: wash and dry the lettuce, slice the cucumber, and shred the carrot.
  6. Toast the burger buns lightly in the skillet or oven.
  7. Assemble the burgers: place a lettuce leaf on the bottom half of each bun, add a cooked patty, top with cucumber slices, shredded carrot, and drizzle with peanut sauce.
  8. Cover with the top half of the bun and serve immediately.
