- Coconut milk - 400 ml

- Chicken breast (sliced) - 200 grams
- Bell pepper (sliced) - 1 medium
- Zucchini (sliced) - 1 medium
- Baby spinach - 100 grams
- Basil leaves - 10 grams
- Lime juice - 1 tablespoon
- Fish sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Jasmine rice - 150 grams
Steps
- Cook the jasmine rice according to package instructions and set aside.
- In a large pan, heat the olive oil over medium heat.
- Add the green curry paste and sauté for 1-2 minutes until fragrant.
- Add the sliced chicken breast to the pan and cook until browned, about 5-7 minutes.
- Pour in the coconut milk and stir to combine with the curry paste.
- Add the bell pepper and zucchini to the pan, and simmer for 5-7 minutes until the vegetables are tender.
- Stir in the baby spinach, fish sauce, and lime juice, and cook for another 2-3 minutes until the spinach is wilted.
- Remove from heat and garnish with fresh basil leaves.
- Serve the curry hot over jasmine rice.
