Ingredients

  • Coconut milk - 400 ml
  • Green curry paste - 2 tablespoons
  • Chicken breast (sliced) - 200 grams
  • Bell pepper (sliced) - 1 medium
  • Zucchini (sliced) - 1 medium
  • Baby spinach - 100 grams
  • Basil leaves - 10 grams
  • Lime juice - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Jasmine rice - 150 grams

Steps

  1. Cook the jasmine rice according to package instructions and set aside.
  2. In a large pan, heat the olive oil over medium heat.
  3. Add the green curry paste and sauté for 1-2 minutes until fragrant.
  4. Add the sliced chicken breast to the pan and cook until browned, about 5-7 minutes.
  5. Pour in the coconut milk and stir to combine with the curry paste.
  6. Add the bell pepper and zucchini to the pan, and simmer for 5-7 minutes until the vegetables are tender.
  7. Stir in the baby spinach, fish sauce, and lime juice, and cook for another 2-3 minutes until the spinach is wilted.
  8. Remove from heat and garnish with fresh basil leaves.
  9. Serve the curry hot over jasmine rice.
