Ingredients

  • Ground pork - 300 grams
  • Ground beef - 200 grams
  • Pork fat - 100 grams
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Smoked paprika - 1 tablespoon
  • Cayenne pepper - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • Liquid smoke - 1 teaspoon
  • Apple cider vinegar - 1 tablespoon
  • Fresh parsley, chopped - 2 tablespoons
  • Pork casings - 2 meters

Steps

  1. Soak the pork casings in water for at least 30 minutes to soften them.
  2. In a large mixing bowl, combine the ground pork, ground beef, and pork fat.
  3. Add garlic powder, onion powder, smoked paprika, cayenne pepper, black pepper, salt, liquid smoke, apple cider vinegar, and chopped parsley to the meat mixture.
  4. Mix all ingredients thoroughly until well combined. You can use your hands or a spoon.
  5. Rinse the soaked casings under cold water and then slide one end onto a sausage stuffer attachment.
  6. Fill the casings with the sausage mixture, being careful not to overstuff them. Tie off the ends with kitchen twine.
  7. Preheat your grill or smoker to a medium heat (about 150-160°C).
  8. Place the sausages on the grill and cook for about 30-40 minutes, turning occasionally until they reach an internal temperature of 70°C.
  9. Remove from the grill and let rest for 10 minutes before slicing.
  10. Serve the sausages with your favorite low-carb sides or on their own.
