  • Bell pepper - 1 medium, chopped
  • Canned diced tomatoes - 400 grams
  • Tomato paste - 2 tablespoons
  • Beef broth - 250 milliliters
  • Chili powder - 2 tablespoons
  • Cumin - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Kidney beans - 200 grams, drained and rinsed

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.

  5. Add the canned diced tomatoes, tomato paste, and beef broth to the pot. Stir well to combine all ingredients.
  6. Bring the mixture to a simmer, then reduce the heat to low and let it cook uncovered for 30 minutes, stirring occasionally.
  7. After 30 minutes, add the kidney beans and cook for an additional 10 minutes until heated through.
  8. Serve hot, garnished with freshly chopped cilantro.
