Ingredients

  • beef brisket - 1 kg
  • kosher salt - 2 tablespoons
  • black pepper - 1 tablespoon
  • garlic powder - 1 tablespoon
  • onion powder - 1 tablespoon
  • paprika - 1 tablespoon
  • cayenne pepper - 1 teaspoon
  • apple cider vinegar - 100 ml
  • beef broth - 250 ml
  • wood chips (hickory or oak) - 1 cup

Steps

  1. Prepare the brisket by trimming excess fat, leaving about 1/4 inch of fat on one side for moisture.
  2. In a small bowl, mix together kosher salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper to create a dry rub.
  3. Rub the spice mixture evenly over the brisket, covering all sides. Let it sit at room temperature for 30 minutes.
  4. Preheat your smoker or grill to 110°C (225°F). If using a grill, set up for indirect cooking.
  5. Soak wood chips in water for at least 30 minutes, then drain.
  6. Place the brisket on the smoker or grill, fat side up, and add the wood chips to the heat source.
  7. Smoke the brisket for about 6-8 hours, or until the internal temperature reaches 93°C (200°F).
  8. During the cooking process, spray the brisket with apple cider vinegar every hour to keep it moist.
  9. Once done, remove the brisket from the smoker and wrap it in foil. Let it rest for at least 30 minutes before slicing.
  10. Slice against the grain and serve with your favorite barbecue sauce, if desired.
