- beef brisket - 1 kg
- kosher salt - 2 tablespoons
- black pepper - 1 tablespoon
- garlic powder - 1 tablespoon
- onion powder - 1 tablespoon
- paprika - 1 tablespoon
- cayenne pepper - 1 teaspoon
- apple cider vinegar - 100 ml
- beef broth - 250 ml
- wood chips (hickory or oak) - 1 cup
Steps
- Prepare the brisket by trimming excess fat, leaving about 1/4 inch of fat on one side for moisture.
- In a small bowl, mix together kosher salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper to create a dry rub.
- Rub the spice mixture evenly over the brisket, covering all sides. Let it sit at room temperature for 30 minutes.
- Preheat your smoker or grill to 110°C (225°F). If using a grill, set up for indirect cooking.
- Soak wood chips in water for at least 30 minutes, then drain.
- Place the brisket on the smoker or grill, fat side up, and add the wood chips to the heat source.
- Smoke the brisket for about 6-8 hours, or until the internal temperature reaches 93°C (200°F).
- During the cooking process, spray the brisket with apple cider vinegar every hour to keep it moist.
- Once done, remove the brisket from the smoker and wrap it in foil. Let it rest for at least 30 minutes before slicing.
- Slice against the grain and serve with your favorite barbecue sauce, if desired.
