  • Brisket - 400 grams
  • Smoked paprika - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon

  • Black pepper - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Gluten-free sandwich rolls - 2
  • Pickled jalapeños - 40 grams
  • Coleslaw mix - 100 grams
  • Gluten-free barbecue sauce - 4 tablespoons

Steps

  1. Preheat your smoker or grill to 120°C (250°F).
  2. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper to create a dry rub.
  3. Rub the spice mixture all over the brisket, ensuring it's well coated, and let it sit at room temperature for 30 minutes.
  4. Once the smoker is ready, place the brisket on the grill grates and smoke for about 4 hours, or until the internal temperature reaches 90°C (195°F).
  5. Remove the brisket from the smoker and wrap it in aluminum foil. Let it rest for at least 30 minutes.
  6. While the brisket is resting, prepare the coleslaw by mixing the coleslaw mix with 2 tablespoons of gluten-free barbecue sauce in a bowl.
  7. Slice the brisket against the grain into thin pieces.
  8. To assemble the sandwich, place a generous amount of brisket on the bottom half of each gluten-free roll, add pickled jalapeños, and top with the coleslaw mixture.
  9. Drizzle additional barbecue sauce over the top, if desired, and place the other half of the roll on top.
