Ingredients

  • Gluten-free tortilla chips - 150 grams
  • Ground beef - 200 grams
  • Cheddar cheese, shredded - 150 grams
  • Monterey Jack cheese, shredded - 100 grams
  • Black beans, drained and rinsed - 100 grams
  • Jalapeños, sliced - 50 grams
  • Tomato, diced - 1 medium
  • Red onion, diced - 1/4 medium
  • Cilantro, chopped - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Taco seasoning - 1 tablespoon
  • Sour cream - 2 tablespoons
  • Guacamole - 2 tablespoons

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a skillet, heat the olive oil over medium heat and add the ground beef.
  3. Cook the beef until browned, breaking it apart with a spatula, about 5-7 minutes.
  4. Stir in the taco seasoning and cook for an additional 2 minutes, then remove from heat.
  5. On a baking sheet, spread out the gluten-free tortilla chips evenly.
  6. Layer the cooked ground beef over the chips, followed by black beans, diced tomatoes, red onion, jalapeños, and both cheeses.
  7. Place the baking sheet in the oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and garnish with chopped cilantro.
  9. Serve hot with dollops of sour cream and guacamole on the side.
