- Butternut squash - 400 grams
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tomato sauce (no added sugar) - 1/2 cup
- Fresh spinach - 100 grams
- Cherry tomatoes - 100 grams, halved
- Goat cheese - 50 grams, crumbled
- Fresh basil leaves - 10 grams, for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Cut the butternut squash in half lengthwise and scoop out the seeds.
- Drizzle the squash halves with 1 tablespoon of olive oil, garlic powder, oregano, salt, and black pepper.
- Place the squash halves cut-side down on a baking sheet lined with parchment paper and roast for 25 minutes, or until tender.
- While the squash is roasting, prepare the toppings by sautéing the fresh spinach in the remaining tablespoon of olive oil over medium heat until wilted, about 3-4 minutes.
- Once the squash is done, carefully flip them over and spread 1/4 cup of tomato sauce on each half.
- Top each squash half with the sautéed spinach, halved cherry tomatoes, and crumbled goat cheese.
- Return the topped squash to the oven and bake for an additional 5-7 minutes until the cheese is slightly melted.
- Remove from the oven, garnish with fresh basil leaves, and serve warm.
