Ingredients

  • Salmon fillets - 2 x 150g
  • Soy sauce - 4 tablespoons
  • Honey - 2 tablespoons
  • Mirin - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cooked rice - 2 cups (white or brown)
  • Broccoli - 100g, cut into florets
  • Carrot - 1 medium, julienned
  • Sesame seeds - 1 tablespoon
  • Green onions - 2, chopped
  • Olive oil - 1 tablespoon

Steps

  1. In a bowl, whisk together soy sauce, honey, mirin, rice vinegar, minced garlic, and grated ginger to create the teriyaki marinade.
  2. Place the salmon fillets in the marinade, cover, and let them marinate in the refrigerator for at least 15 minutes.
  3. While the salmon is marinating, cook the rice according to package instructions and steam the broccoli until tender.
  4. Heat olive oil in a skillet over medium heat. Remove the salmon from the marinade (reserve the marinade) and place it in the skillet.
  5. Cook the salmon for about 4-5 minutes on each side or until cooked through and slightly caramelized.
  6. In the same skillet, add the reserved marinade and bring it to a boil, then reduce to a simmer until slightly thickened, about 2-3 minutes.
  7. To serve, divide the cooked rice between two bowls, top with salmon, steamed broccoli, and julienned carrot.
  8. Drizzle the thickened teriyaki sauce over the salmon and rice, and garnish with sesame seeds and chopped green onions.
